Kupela represents the best of traditional Basque cuisine and its famous cider houses. Located just behind the Spanish Congress, its decoration is typical of the sidrerías of northern Spain, where ingredients are always local and of the highest quality. Kupela offers a great location in Madrid to enjoy typical Basque fare such as rib of beef, an unbeatable roast monkfish or the classic salt cod tortilla - always the test of a good sidrería. Kupela is one of the restaurants where the cider is still served directly from the barrel (called a kupela in Basque), capturing all its freshness, which has to be enjoyed as soon as it is poured.
